Happy first day of Spring, y'all! Warm times are finally OFFICIALLY on the horizon! To celebrate, I've got a delicious adaptation of the classic Italian cocktail, Sgroppino. Sgroppino (originally from Venice) is a refreshing drink consisting of vodka, prosecco and lemon gelato. I based my cocktails on this recipe from Food Network.

Ingredients
1 cup prosecco
2 tablespoons chilled vodka
1/3 cup frozen sorbet
1/4 teaspoon chopped fresh mint leaves

I used Skinny Girl prosecco because that's what I had in my fridge. You can alter the amount of vodka, prosecco, or sorbet to your taste. Garnish with fruit and start drinking! I used flavored vodka and different flavors of sorbet to make each drink. The combinations I used are: Blueberry vodka + Lemon sorbet, Gummy vodka + Raspberry sorbet, Vanilla vodka + Orange sorbet (HI, IT'S A CREAMSICLE), and Regular vodka + Rainbow sorbet. The creamsicle was probably my favorite, and I'll probably be drinking it all spring/summer. Cheers!
